LODGE CHEF

We are seeking a full-time Head Chef at the Lodge. The position includes accommodation, meals and return air fares to Darwin.

What can you do for us?

As part of a dynamic team operating the Lodge, you will be responsible for providing high-quality meals to ensure clients have a once-in-a-lifetime experience at the Lodge.
Reporting to the Lodge Manager, the Lodge Chef is responsible for:

  • Planning and cooking meals, taking into account such factors as freshly caught fish and mudcrabs, seasonal availability of ingredients, the number of clients and individual client dietary requirements. NB Use local seafood as much as is acceptable to guests, including a seafood banquet on the last evening of each group’s trip.
  • Preparing and cooking three high-quality meals a day plus pre-dinner hot finger foods (mainly seafood). Exciting lunches are pre-prepared meals in special lunch boxes.
  • Maintaining a timely use of stores to maximise efficiencies and minimise wastage.
  • Supervising staff as required. Checking the quality of raw and cooked food products to ensure that standards are met.
  • Estimating amounts of food items and costs of required supplies. Ordering stock and check the quantity and quality of received products.
  • Ensuring all standards are complied with in regard to the operations of Food Business Certification and Boarding House Certification and in compliance with the Public Health Act and its regulations.
  • Ensuring Lodge dining/lounge area, verandah and surrounds, and bar area fridge/ice boxes are always immaculately clean and stocked adequately with beverages and bar supplies.
  • Ensuring all standards are complied with in regard to the operations of Food Business Certification and Boarding House Certification and in compliance with the Public Health Act and its regulations.

Required Skills and Experience

  • Must be trade qualified.
  • Strong communication skills.
  • Flexible, hard-working.
  • Proven record in delivering exceptional meals and excellent customer service.
  • Australian citizen or permanent resident
